A wonderfully delicious recipe which will surely impress a meat lover. Pineapple compliments pork tenderloin in the wonderful way.

Cooking Time: 14 minutes
Ingredients:
2 tablespoons coconut oil
1½ pound pork tenderloin, trimmed and cut into bite-sized pieces
1 onion, chopped
2 minced garlic cloves
1 (1-inch) piece fresh ginger, minced
20-ounce pineapple, cut into chunks
1 large red bell pepper, seeded and chopped
¼ cup fresh pineapple juice
¼ cup coconut aminos
Salt and freshly ground black pepper, to taste
Directions:In a substantial skillet, melt coconut oil on high heat.
Add pork and stir fry approximately 4-5 minutes.
Transfer the pork right into a bowl.
In exactly the same skillet, heat remaining oil on medium heat.
Add onion, garlic and ginger and sauté for around 2 minutes.
Stir in pineapple and bell pepper and stir fry for around 3 minutes.
Stir in pork, pineapple juice and coconut aminos and cook for around 3-4 minutes.
Serve hot.
