Ingredients:
1 tablespoon fresh ginger, chopped finely
4 garlic cloves, chopped finely

¼ cup plus 1 tbsp olive oil, divided
1-pound tender pork, trimmed, sliced thinly
2 onions, sliced thinly
1 green bell pepper, seeded and sliced thinly
1 tablespoon fresh lime juice
Directions:
In a substantial bowl, mix together ginger, garlic, ½ cup of cilantro and ¼ cup of oil.
Add pork and coat with mixture generously.
Refrigerate to marinate approximately a couple of hours.
Heat a big skillet on medium-high heat.
Add pork mixture and stir fry for approximately 4-5 minutes.
Transfer the pork right into a bowl.
In the same skillet, heat remaining oil on medium heat.
Add onion and sauté for approximately 3 minutes.
