A light and highly Protein enriched egg and veggie dish that may be enjoyed by all. This no-baked frittata recipe is often a true example of versatility and deliciousness.

Ingredients:
2 tablespoons coconut oil
1 large sweet potato, peeled and cut into thin slices
1 red bell pepper, seeded and sliced
2 zucchinis, sliced
8 organic eggs
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped finely
Directions:
Preheat the oven to broiler.
In a substantial oven proof skillet, heat oil on medium-low heat.
Add sweet potato and cook approximately 7-8 minutes.
Add bell pepper and zucchini and cook for about 3-4 minutes.
Meanwhile in a bowl, add eggs, salt and black pepper and beat till well combined.
Pour egg mixture over veggies evenly. Immediately, decrease the heat to low.
Cook for about 10 minutes or till just done.
Transfer the skillet beneath the broiler and broil approximately 3-4 minutes or till top becomes golden brown.
Cut the frittata in desired size slices. Serve while using garnishing of parsley.
