Ingredients:
6 large organic eggs
Salt and freshly ground black pepper, to taste
½ cup coconut milk
½ of onion, chopped
¼ cup red bell pepper, seeded and chopped
¼ cup fresh mushrooms, sliced
1 tablespoon chives, minced
Directions:
Preheat the oven to 350 degrees F. Lightly, grease a pie dish.
In a bowl, add eggs, salt, black pepper and coconut oil and beat till well combined.
In another bowl, mix together onion, bell pepper and mushrooms.
Transfer the egg mixture in prepared pie dish evenly.
Top with vegetable mixture evenly. Sprinkle with chives evenly.
Bake approximately 20-25 minutes.
